Have you ever heard of syrniki? Well, this dish is trendy around the world and is mainly called cheese pancakes. However, cheese pancakes are bigger than syrniki, which don’t look like regular pancakes. Why did I come up with a decision to write their recipe? You see, people often thirst for healthy sweets and ultra-delicious breakfast, which can be prepared in a fraction of time. And syrniki are the ones that can be cooked without all these “bad” ingredients while tasting like an absolute godsend.

So, for 8-9 cheese pancakes we will need:
350 g cottage cheese
3 tbsp rice flour (you can use any flour you desire; I prefer the rice one as it’s more healthy and doesn’t contain gluten)
1 egg
1 tbsp sugar (or any sweetener you like; honey also works here)
10 g vanillin
10 g baking powder
Directions:
Whip eggs with the sugar and add to the cheese. Add vanillin and baking powder and mix everything thoroughly. It’s better you use a blender to make the mixture smooth. Yeah, that’s actually everything you need to do to prepare this breakfast. Then, add 1 tbsp of the rice flour to the cooking board.
Wet your hands with water and start forming little round pieces of the cheese mixture. Take each piece of “dough” and put it into the rice flour and then into your frying pan (which is already greased). Fry each side for 3-4 minutes until golden brown is visible.
You can add to syrniki anything you like, whether it’s fruits, berries, nuts, peanut butter, honey, maple syrup, or sour cream. Just take the fried cheese pancakes out of the pan on a flat plate and embroider them with your fav food. Except for being extremely tasty, they look amazing -- ready to be posted on your Instagram page! And yeah, you won’t get extra pounds having such a fabulous breakfast.
